Cuvée Pauline

Terroir: Chalky-clayey


This medium-dry sparkling rosé "méthode traditionnelle" is produced under the Touraine appellation, the only colour touch of Le Clos de l'Epinay.
The "méthode traditionnelle" consists of first of all picking the grapes when they are not too ripe in order to have the right acidity. Before the first fermentation in thermo-regulated stainless steel vats, there is a soaking of the grape during 12 hours in order to extract the colour from the skin. To start the second fermentation in the bottle when the wine will rest in the cellar for at least 12 months, we add the "liqueur de tirage" made of yeast and sugar which will release the carbon dioxide. Before putting the corks in place and selling the wine, we remove the sediment that has appeared in the bottle.
