Classique Brut or Demi-sec

Terroir: Chalky-clayey


This sparkling white wine A.C. Vouvray is made using the "méthode traditionnelle".
The "méthode traditionnelle" consists of first of all picking the grapes when they are not too ripe in order to have the right acidity and then the first fermentation occurs in thermo-regulated stainless steel vats. To start the second fermentation in the bottle when the wine will rest in the cellar for at least 24 months, we add the "liqueur de tirage" made of yeast and sugar which will release the carbon dioxide. Before putting the corks in place and selling the wine, we remove the sediment that has appeared in the bottle.
